  • Pork tenderloin – 150 g

  • Small onion - 50 g

  • Olive oil - 7 g

How to make egg soup

  1. We clean the pork tenderloin from the films and cut it finely across the grain, the thickness of the slices is approximately 0.5 cm.
  2. Place the meat in a 1.5 liter pan, pour in a little more than half the pan (650-700 ml) of water, and put it on the fire.
  3. Set the eggs to boil hard.
  4. While the water with the meat is boiling and the eggs are boiling, grate the carrots, chop the onion and lightly fry in a tablespoon of olive oil.
  5. When the water with the meat boils, skim off the foam and immediately add the roast and star pasta to the soup. Stir the soup until it boils to prevent the pasta from sticking.
  6. Cook the soup for 10 minutes (or as much as indicated on the pasta package minus 2-3 minutes).
  7. In the meantime, cut the greens and egg.
  8. When the pasta has cooked for the allotted time, add the herbs and egg to the soup, bring to a boil and turn off the heat.
  9. It is better to serve it to the table not immediately, but after the soup has stood for 5-10 minutes.





I bring ingredients for the smallest pan, because this soup should only be eaten fresh! I get a fairly thick soup, weighing 1150-1200 g in total. The family eats it in one lunch.

Nettles can be picked in May - July, cutting off only small fresh leaves. Before slicing, rinse with hot water and then rinse under running water. If you don’t have nettles, then use regular herbs: parsley, dill, basil.

As for pasta, a lot depends on the manufacturer. In this soup I use Del Castello pasta - Italian pasta takes a very long time to cook, unlike Russian pasta. On the packaging of the “stars” it says to cook for 6-7 minutes, but at this time they turn out undercooked, this is how they are cooked in Italy - until half cooked, now it is fashionable to use this word: “al dente”. In my opinion, there is a difference between undercooked pasta and almost raw pasta. So Del Castello needs to be cooked twice as long as it says on the package. Otherwise, they are not only undercooked, they may even remain dry inside, i.e. not even a third cooked! I cook them for 10 minutes until the soup cools, they will be ready.

As an Italian friend explained to me, the time is indicated for macaroni and pasta, which will then simmer in the sauce and reach readiness, but not for putting it directly on a plate.

It is better to cook Russian pasta, even from durum wheat, in soup for 2 minutes less than indicated on the package: if it is indicated to cook for 5-7 minutes, cook for 4 minutes, if for 12 minutes, then cook for 7-8 minutes.

Many people remember this soup from the semi-finished products that became widespread during perestroika times. The briquette contained powdered chicken broth, dried vegetables and a completely unusual filling - stars. It is noteworthy that such pasta was practically never found in packs. For example, such a soup with stars is indispensable on a hike: it is light and compact, and very little firewood is needed for cooking. It can also help out in the evening of a difficult day, when there is neither time nor energy for visits to the store and cooking. But you shouldn’t formulate a diet only from briquetted soups. And the taste of such a product is significantly inferior to homemade.

Preparation

If you are going to prepare star soup, the recipe of which contains only natural ingredients, prepare the following products:

  • Chicken - 1 pc.
  • Potatoes - 1 kg.
  • Carrots and onions - 1-2 pcs.
  • Stars - 250 g.
  • Spices.

This amount is enough to cook a four-liter pan. Boil the chicken until done and remove from the broth. Add the potatoes cut into cubes, and when they boil, add the onions. Grate the carrots on a fine grater. Also throw it in the soup. Boil for about ten minutes and add the stars. Simmer the soup until the pasta and potatoes are completely cooked. Before serving, add boiled chicken meat, cut into pieces, to the plates.

1 step. We start cooking our children's soup by preparing the broth, for this we take two chicken legs, remove the outer skin from them, rinse, fill with water and bring to a boil. After the chicken boils for the first time, remove it from the heat, drain the water, rinse the legs, fill it with water again and now cook the broth until fully cooked for one hour.

After an hour, take the potatoes, peel them, cut them into small pieces, as for any other soup, and put them in the broth.

Step 2. While the potatoes are boiling, we take one carrot, we also peel it, wash it and cut it into circles, so that their thickness does not exceed two to three millimeters. Place the chopped carrots into the broth.


Step 3. The next ingredient is onions. We will need half a small onion, which we will peel and cut into fairly large pieces. We will also add onions to the soup.


Step 4 When the potatoes in the soup are almost ready, take a young zucchini, peel it and cut it into small cubes. Let's add the zucchini to the soup and continue preparing our dish.


Step 5 To make the soup aromatic, healthy and tasty, add one large clove of garlic, which we cut into thin slices and add to the dish. We also add salt to the soup to taste.


Step 6 At the end, we add a tablespoon of small pasta stars to the dish, which are sure to attract the attention of any child and he will probably like the taste, like the whole soup.

Cook everything together until done for another seven minutes.

You will need:

  • 200 g chicken fillet;
  • liter of cold water;
  • liter of hot water;
  • salt to taste.

Cook the broth:

  1. Pour a liter of cold water over the chicken. We are waiting for it to boil.
  2. Drain the water and rinse the meat with warm water. Place it back into the pan and add a liter of hot water. Add salt.
  3. Cook the broth for 40-60 minutes.

If you want to remove as many harmful substances as possible from meat, it is recommended to soak it in plenty of cold water (an hour or two) before cooking. The second broth can be cooked not only from the breast, but also from any other meat and from a whole chicken (do everything as usual, just drain the “first” water).

Cooking chicken soup with stars

For a delicious first course we will need:

  • 1-1.5 kg of chicken (you can take a whole bird or some parts of it);
  • 5 potatoes;
  • 250 g of pasta (we recommend taking durum wheat stars - they taste better, have more benefits and don’t get so boiled);
  • 1 carrot;
  • 1 onion;
  • salt;
  • pepper (peas and ground), herbs, bay leaves (optional).

Let's start preparing the soup:

  1. Cut the chicken into small pieces. Pour cold water over the meat so that the bird is covered by a few centimeters. Salt, add bay leaf and peppercorns. Bring to a boil, reduce heat (below medium). Remove the foam that appears. Cook the chicken broth until tender (40-60 minutes from the broiler). You can also make a second broth as described above if you wish.
  2. While we prepare the vegetables: wash and peel. Chop the onion finely and the potatoes into small cubes. Carrots can be cut into slices, finely chopped or grated.
  3. Strain the broth into another pan. Set the chicken aside for now on a plate. Bring the broth to a boil, add potatoes to it, cook for 10-15 minutes.
  4. Add carrots, onions and stars to the soup. Cook until all ingredients are ready (5-10 minutes, depending on the type of pasta).
  5. Return the chicken meat, disassembled into miniature pieces, into the broth and boil for another minute.
  6. When serving, you can pepper the soup and sprinkle with chopped herbs.
